Blog #4 – A Look at the Nutrition and Meal Plan

Happy Wednesday! Quick update today following another great session at Orange Theory.

I thought you might be interested in seeing some of the items that have been on my meal plan lately. I already feel so much lighter making a better effort at getting my veggies in. They say 80% of your results come from the food choices you make, so working on doing better over here week after week.

That tortilla is actually made with chickpeas, and that’s a full CUP of veggies piled on top from cauliflower rice and fresh pico (plus there’s grilled chicken in there!).

This week I also made a soup with ginger, scallions, spinach, and mushrooms:

And one of my favorite snacks:

And… because the Kansas City Dietitian encouraged me to broaden more horizons and eat a rainbow because I’ve been stuck in my favorites for awhile, tonight I’m serving up the spaghetti squash that I picked up over the weekend at Terra Health Market!!
